→ Pulled Pork
01 - 2 cups cooked pulled pork, homemade or store-bought
02 - 1/2 cup barbecue sauce
→ Bread and Dairy
03 - 8 slices sourdough or country bread
04 - 8 slices sharp cheddar cheese
05 - 4 tablespoons unsalted butter, softened
→ Extras
06 - 1/2 red onion, thinly sliced
07 - 1/2 cup pickled jalapeños, drained
# Method:
01 - Combine pulled pork and barbecue sauce in a small bowl until the meat is evenly coated. If pork is cold, warm gently using a skillet or microwave.
02 - Arrange bread slices on a clean surface. Spread a thin layer of softened butter on one side of each slice.
03 - On the unbuttered side of 4 bread slices, place 1 slice of cheddar cheese, a generous helping of BBQ pulled pork, optional onions and jalapeños, and another slice of cheddar cheese. Top each with a remaining piece of bread, buttered side facing out.
04 - Heat a large skillet or griddle over medium heat until hot.
05 - Transfer sandwiches to the skillet and cook for 3 to 4 minutes per side, gently pressing, until bread is deeply golden brown and cheese is melted.
06 - Remove sandwiches from pan and allow to cool for 1 minute. Slice and serve immediately while hot.
