# Method:
01 - Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
02 - In a skillet over medium heat, cook bacon until crisp. Drain on paper towels, allow to cool, and chop finely. Set aside.
03 - In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, cardamom, cloves, nutmeg, and black pepper until thoroughly blended.
04 - In a large mixing bowl, beat the softened butter with granulated sugar and brown sugar using an electric mixer or whisk until light and fluffy, about 2 minutes.
05 - Add maple syrup, eggs, and vanilla extract to the creamed butter mixture, beating well after each addition until fully incorporated.
06 - Gradually mix the dry ingredients into the wet ingredients, stirring just until a soft dough forms.
07 - Fold the chopped bacon gently into the dough, distributing evenly.
08 - Drop tablespoon-sized portions of dough onto prepared baking sheets, spacing cookies approximately 2 inches apart.
