# Method:

01 - Place a tortilla flat on a clean surface. Make a single cut from the center of the tortilla straight to the edge.
02 - Visualize the tortilla as four quarters. Spread 2 tablespoons marinara sauce and half of the shredded chicken in the lower left quarter.
03 - Sprinkle half of the mozzarella cheese in the upper left quarter.
04 - Spread 2 tablespoons marinara sauce and sprinkle oregano, garlic powder, and optional red pepper flakes in the upper right quarter.
05 - Place a few fresh basil leaves in the lower right quarter, if desired.
06 - Fold the tortilla from the bottom left quarter upwards, then to the right, and finally down, forming a layered triangle.
07 - Repeat steps 1 through 6 using the second tortilla.
08 - Heat olive oil in a nonstick skillet over medium heat. Place wraps seam side down and cook 2 to 3 minutes per side until golden brown and crisp.
09 - Remove from skillet, optionally slice in half, and serve hot.

# Expert Advice:

01 -
  • It tastes like pizza but cooks in under 10 minutes, no oven preheating required.
  • The folding technique keeps every layer distinct, so you get cheese, sauce, and chicken in every bite.
  • You can customize it endlessly with whatever toppings are lurking in your fridge.
02 -
  • Don't overfill the quarters or the wrap will burst open when you fold it, I learned this the messy way.
  • Use medium heat in the skillet, too high and the tortilla burns before the cheese melts.
  • Press down lightly with the spatula while cooking to help the layers fuse together.
03 -
  • Brush the outside of the folded wrap lightly with olive oil before cooking for an even crispier finish.
  • Use a pizza cutter to slice the finished wrap cleanly without squishing the fillings out.
  • If you don't have marinara, mix tomato paste with a little water, garlic powder, and Italian seasoning for a quick substitute.
