# Components:

→ Vegetables

01 - 1 large English cucumber

→ Dairy

02 - 4 oz cream cheese, softened

→ Deli Meats

03 - 4 oz sliced turkey breast or ham

→ Seasonings & Extras

04 - 1 tbsp fresh chives, finely chopped
05 - 1 tbsp fresh dill, finely chopped
06 - ½ tsp garlic powder
07 - Salt and pepper, to taste

→ Optional Fillings

08 - 1 small red bell pepper, julienned
09 - 1 small avocado, sliced

# Method:

01 - Wash the cucumber and trim the ends. Using a mandoline or vegetable peeler, slice the cucumber lengthwise into long, thin strips. Pat dry with a paper towel.
02 - In a small bowl, mix the cream cheese with chives, dill, garlic powder, salt, and pepper until smooth and well combined.
03 - Lay out the cucumber strips on a clean work surface. Spread a thin layer of the seasoned cream cheese along each strip.
04 - Place a slice of deli meat on top of the cream cheese layer. Add a few pieces of red bell pepper or avocado if desired.
05 - Carefully roll up each cucumber strip into a tight spiral. Place seam side down on a serving platter. Sprinkle with everything bagel seasoning if using. Serve immediately, or chill for 15 minutes to firm.

# Expert Advice:

01 -
  • No cooking required means your kitchen stays cool and your prep time is minimal
  • The crunch of cucumber against creamy filling creates that perfect texture contrast we all crave
  • Endless customization options make it impossible to get bored
02 -
  • Pat your cucumber strips thoroughly dry with paper towels before you start assembling, or the filling will slide right off
  • Work quickly once you start, because salt draws moisture out of cucumbers and they'll get watery if left sitting too long
  • If a strip breaks while you're slicing it, don't worry. Just use the shorter pieces for mini roll-ups or layer two pieces to make a longer strip.
03 -
  • Use a mandoline if you have one. Consistent thickness makes rolling so much easier and your roll-ups will look professional
  • If your cream cheese is too soft to spread cleanly, pop it in the fridge for 10 minutes to firm up slightly
  • These are best eaten the same day, but leftovers will keep for 24 hours in the fridge if you must store them
