Save Golden, crispy fries baked in a rich, spicy-sweet honey Sriracha sauce with melty cheese and scallions—a bold twist on loaded fries, perfect for sharing.
I created this recipe after craving something comforting and punchy for a quick weeknight get-together. The honey and Sriracha blend was such a hit that the fries disappeared in minutes, and everyone asked for the recipe.
Ingredients
- Fries: 900 g (2 lbs) frozen or fresh French fries
- Honey: 3 tbsp
- Sriracha sauce: 3 tbsp
- Unsalted butter, melted: 2 tbsp
- Soy sauce: 1 tbsp
- Rice vinegar: 1 tbsp
- Garlic clove, minced: 1
- Mozzarella cheese, shredded: 150 g (1 ½ cups)
- Cheddar cheese, shredded: 60 g (½ cup)
- Scallions, thinly sliced: 2
- Fresh cilantro, chopped (optional): 1 tbsp
- Small red chili, thinly sliced (optional): 1
Instructions
- Preheat and Prepare:
- Preheat oven to 220°C (425°F). Line a large baking sheet with parchment paper.
- Bake Fries:
- Spread fries on prepared baking sheet. Bake according to package instructions or until golden and crispy, about 25–30 minutes.
- Make Sauce:
- In a small saucepan over low heat, combine honey, Sriracha, melted butter, soy sauce, rice vinegar, and minced garlic. Stir until well blended and warmed through, about 2–3 minutes. Remove from heat.
- Assemble:
- Transfer fries to a large ovenproof casserole dish. Drizzle honey Sriracha sauce over fries and toss gently to coat.
- Add Cheese:
- Sprinkle mozzarella and cheddar cheese evenly over sauced fries.
- Bake Again:
- Return casserole dish to oven and bake for 8–10 minutes, or until cheese is melted and bubbly.
- Finish & Serve:
- Remove from oven. Top with sliced scallions, cilantro, and red chili if desired. Serve immediately.
Save My kids love helping sprinkle the cheese and scallions just before the final bake. It's always fun seeing everyone dig in straight from the casserole dish—no plates needed.

Recipe Guide
- → Can I use fresh fries instead of frozen?
Yes, fresh fries work well and can be double-fried for extra crispiness before baking with toppings.
- → How spicy are these casserole fries?
The Sriracha and optional red chili give a gentle kick; adjust to taste or offer extra chili slices on the side.
- → Can I add protein like chicken or bacon?
Absolutely. Add cooked bacon bits or grilled chicken before layering with cheese for a heartier dish.
- → What cheese can I use besides mozzarella and cheddar?
Pepper jack adds heat, or use your favorite shredded cheese for different flavors and meltiness.
- → How should leftovers be reheated?
Reheat in the oven to restore crispiness; microwave is quicker but may soften fries and toppings.
- → Are these fries suitable for vegetarians?
Yes, as long as vegetarian cheese is used. Omit bacon or chicken for a fully vegetarian dish.
