# Method:
01 - Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy lifting.
02 - In a large bowl, mix rolled oats, ground flaxseed, chopped roasted peanuts, shredded coconut if using, and salt until evenly distributed.
03 - In a small saucepan over low heat, melt peanut butter, honey, and coconut oil. Stir continuously until fully blended and smooth. Remove from heat and mix in vanilla extract.
04 - Pour melted mixture over dry ingredients. Stir thoroughly to ensure all components are evenly coated.
05 - Transfer mixture to prepared pan. Press down firmly and evenly with a spatula or clean hands to create a uniform layer.
06 - Bake for 18 to 20 minutes or until edges turn lightly golden.
07 - Allow to cool completely in the pan on a wire rack. Once cooled, lift out using parchment overhang and cut into 16 equal squares.
