01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or 2 tablespoons ginger bug
04 - 1/4 cup freshly squeezed lemon juice

05 - 1/2 cup freshly squeezed orange juice
06 - 1/2 cup freshly squeezed lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices, for garnish
09 - Ice cubes for serving

# Method:

01 - In a large clean glass jar, dissolve organic cane sugar into filtered water. Add water kefir grains or ginger bug and pour in lemon juice. Stir gently with a non-metallic spoon to combine.
02 - Cover the jar with a breathable cloth or coffee filter secured by a rubber band. Let ferment at room temperature (68–77°F) for 24 to 48 hours, until mixture is lightly carbonated and tastes pleasantly tangy.
03 - Remove kefir grains or ginger bug using a fine mesh strainer. Reserve or discard cultures according to preference or for subsequent batches.
04 - Pour the fermented soda base into a pitcher and add orange juice, lime juice, and mint leaves. Mix gently to incorporate the flavors without disturbing carbonation.
05 - Distribute ice cubes among serving glasses, pour finished mocktail over ice, and garnish each glass with an orange slice and additional mint leaves if desired.
06 - Serve promptly to enjoy optimal fizziness and freshness.
