Spicy Peanut Chicken Skewers (Printable)

Juicy chicken cubes marinated in a spicy peanut sauce, grilled with fresh herbs and lime.

# Components:

→ Chicken Skewers

01 - 1.3 lb boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
02 - 8 wooden or metal skewers

→ Spicy Peanut Marinade

03 - 4 tbsp creamy peanut butter
04 - 2 tbsp soy sauce
05 - 2 tbsp lime juice (about 1 lime)
06 - 1 tbsp brown sugar
07 - 1 tbsp sriracha or chili garlic sauce, adjust to taste
08 - 2 cloves garlic, minced
09 - 1 tbsp fresh ginger, grated
10 - 2 tbsp vegetable oil
11 - 1 tsp ground coriander
12 - 1 tsp ground cumin
13 - 2 tbsp water

→ Garnish

14 - 2 tbsp chopped roasted peanuts
15 - 2 tbsp chopped fresh cilantro
16 - Lime wedges

# Method:

01 - Soak wooden skewers in water for at least 30 minutes to prevent burning if using wooden ones.
02 - In a bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, sriracha, garlic, ginger, vegetable oil, ground coriander, ground cumin, and water until smooth.
03 - Set aside 3 tablespoons of the marinade for brushing during grilling.
04 - Add chicken cubes to the remaining marinade, toss to coat evenly, cover, and refrigerate for at least 1 hour.
05 - Thread the marinated chicken pieces evenly onto the skewers.
06 - Preheat grill or grill pan to medium-high heat and lightly oil the grates.
07 - Grill skewers for 12 to 15 minutes, turning every few minutes until chicken is cooked through and has slight charring.
08 - During the last minute of grilling, brush skewers with the reserved marinade.
09 - Remove skewers from grill, garnish with chopped roasted peanuts, fresh cilantro, and serve with lime wedges.
